Filipino Adobo Recipe
Marinade: 3 pieces of dark meant chicken thighs 1/2 cup soy sauce 1/3 cup vinegar preferably cane but rice vinegar will do. 4 cloves garlic crushed 1tbl spn pepper 1 tsp fish sauce or 1/2 tsp sea salt
Place all in zip lock bag and mix around.
Place in fridge for 1 hour or over night.
Cooking:
Pour all ingredients from zip lock bag to an appropriate pot.
Add a bay leaf.
Heat to a boil then to a medium simmer and cover.
Cook for 45 min.
When ready eat over rice.
Phoenix Fire Bird version:
Extra ingredients Chili oil Coconut milk Pepper flakes Fried garlic Green onions minced
After 45 mins of cook time. Take chicken out and shred. Place on a baking pan and place in the oven to broil on high for 10 mins or until browned and slightly burnt edges.
Reduce the remaining sauce in the pot for 10 mins.
When ready to plate:
Place shredded chicken next to rice. Pour reduced sauce over rice. Pour coconut milk over chicken. Pour chili oil over chicken. Sprinkle pepper flakes over chicken. Sprinkle green onions over rice and chicken. Sprinkle fried garlic over rice and chicken.
Eat!
